S.B.S Barbados 2000 is a single cask rum with an outcome of 186 bottles only. The rum is from the West Indies Rum Distillery WIRD distillery in Barbados and is based on molasses. The rum has been distilled in a pot still in 2000 and was bottled in the 1423 warehouse in Denmark in October 2021. The rum has matured in a Bourbon barrel and received a PX sherry cask finish. It was bottled with an ABV of 47,1% vol. As common practice for Single Barrel Selection rums, no chill filtration has been used. This is a heavy WIRD pot still expression and is famous as called “Rockley Style”. Only a few from these rum’s have been bottled. Rockley refers to a long gone distillery from whom it was supposed that the still has been moved to WIRD. It is known that this is not true, and that the Rockley Still does not exist anymore. However the style of rum made by that distillery on they’re still has been reproduced by WIRD. Probably it is a combination of distillations were their unique and famous triple chambers still has been used as a wash still followed by a second distillation using their small pot still as spirit still.
