The grapes selected for this wine must be suitable in terms of body, colour and alcohol percentage for maturation and bottle keeping. This Amarone consists of: 50% COrvina, 20% Rondinella, 20% Corvinone, and 10% other grapes. The grapes are harvested by hand, directly in the vineyard in September. Then the grapes are placed directly on small plastic trays, in a single layer, until December/January. This process is called “Appassimento”.

Fermentation of Le Ragose Amarone Classico DOCG Riserva 2011 takes place in temperature-controlled stainless steel tanks for about 20-30 days. Indigenous yeasts are used. Maturation for 7 to 8 years in Slovenian oak barrels with a capacity of 50 hectolitres. The grapes grow in an area of ​​about 16 hectares where they have been standing for several years. The terroir is varied but mainly consists of red & brown clay and limestone from the Eocene. There are 4200 plants per hectare and the acidity of the wine is 6 to 6.5 grams per liter.

The Le Ragose Amarone Classico DOCG Riserva 2011 is a powerful wine. Full, ripe and lush berries with hints of dark chocolate. In addition to being powerful, this wine is also elegant, harmonious and seductive. The finish is long and satisfying. This wine goes well with game birds, wild goat, risotto all’Amarone, Gorgonzola, dark chocolate desserts, cheesecakes, and hazelnut & almond desserts.
