Australia has been producing sugar cane juice for almost 150 years and earning its place in the world of rum. Distilled in pot stills, the great aromatic complexity of Plantation Australia 2007 owes its personality to the specific yeasts used during fermentation. The new make spirit is first fermented for 12 days with Schizosaccharomyces pombe, a very rare yeast in the world of rum and dunders, followed by a three-day fermentation with Saccharomyces cerevisiae yeast.

Plantation Australia was distilled in 2007 and was first aged for 13 years in ex-bourbon casks in the cellars of Beenleigh Artisan Distillery. The 21 barrels selected by Alexandre Gabriel then made the sea voyage to Javrezac, in the Charente region of France, where the rum was aged for another year in Maison Ferrand French oak barrels. In the Plantation signature style, this double aging technique emphasizes the highly expressive and complex appeal of this 14-year-old Australian rum.
