The Bimber distillery was founded by whiskey enthusiasts with the mission of producing a single malt with character and high quality, thanks to traditional methods rarely used today.
The journey begins first on the farm where 100% barley is grown. It is then traditionally malted on the ground, crushed by hand and slowly fermented for seven days in handcrafted wooden washbacks on site at the cooperage. The small copper stills are heated by direct fire and the resulting whiskey is aged in rigorously selected casks. To end this journey, the whiskey is finally carefully blended and bottled at the distillery.
This artisanal approach to production from the Bimber distillery passionately combines traditional methods, know-how and an absolute commitment to quality.
For this small batch in an ex-bourbon cask, Quercus Alba, or white oak also commonly known as American oak, highlights the fruity side of the whiskey by giving it sweet and rich flavors of vanilla and caramel, perfectly balanced by a hint of spice.
Complex and rich. Vanilla, cereals, cooked apricot
Nose : Complex and rich. Green apple peels and dried stone fruits are accompanied by regressive notes of cereal soaked in the milk that we eat for breakfast. Finally, notes of vanilla cake, dehydrated coconut and buttered toast are revealed.
Palate : Marked and pleasant. A punchy combination of orchard fruits, cooked apricots and pepper that comes to reveal notes of lightly charred oak and creamy vanilla.
Overall : Sweet and persistent. The sweetness of vanilla is subtly counterbalanced by lingering spice notes.
