Taste profile:
Juicy fruit, blackberries and cherries with a nice finish of unsweetened cocoa.

Vinification:
After three to four days of cold pre-fermentation, the traditional fermentation (temperature controlled) follows with maceration on the skin. The wine then matures for a period of 16 months in the used French barrels to ensure structure and roundness of the wine. Approximately 6 years of storage potential.

Food and wine pairing:
Meat with curry, medium cheeses and also to be served as such.

Background information:
The Tuscan Winery Melini was founded in 1705 by the Florentine Melini family and is located in Gaggiano at 300 meters above sea level in the hills of Chianti Classico. Melini is one of the most prestigious and important wineries in the Chianti area with a total of 163 hectares in its possession, including the vineyards Selvanella, Granaio and Terra Rossa. Winemaker is Alessandro Zanette. Next to the vineyards, you can still see the water source “Bonorli”, from which the name of the wine comes. In the past, water sources in Chianti were difficult to find, but important.
