In 1959, William Fèvre harvested his first vintage from his estate. Coming from a family that had been involved in winegrowing in Chablis for 250 years, it was obvious that he would start his own wine estate with 7 hectares. Domaine William Fèvre now owns 78 hectares, divided over 90 plots, making it one of the largest wineries in Chablis. 16 hectares are classified as Premier Cru, 15 hectares as Grand Cru. Fèvre makes Chablis in which the complex terroir of the individual plots is expressed as purely as possible. For this reason, winemaker Didier Séguier uses no or only used oak barrels, the yields are low and no chemicals are used in the vineyards. Each plot and each harvest year produce completely unique wines. CLIMATE & TERROIR: Semi-continental climate. The grapes come from a plot covering 6.2 hectares. The vineyard is located fully facing
south. The poor soil contains calcareous clay and pebbles on a
sub-layer of limestone from the Kimmeridge period.
VINIFICATION: The grapes are harvested by hand and are partly fermented in
used wooden barrels and partly in stainless steel tanks. The wine matures for
a total of 12 to 15 months, of which more than half is aged for 4 to 6 months in
oak barrels.

SERVING SUGGESTION: Serve at 12 to 14°C with various fish dishes,
shellfish, poultry and white meat, grilled or with
creamy sauces. FACT: The soil of clay and gravel acts as a natural brake on the growth power of the vines. This results in low yields and high concentration in the wine. The southern location also contributes to the full character of this wine.
