CLIMATE & TERROIR: Semi-continental climate. The top layer
the soil is compact and contains a lot of clay. The underlayer consists of:
limestone and fossil oysters from the Kimmeridge era. The
vineyards are oriented to the south and southeast.
VINIFICATION: 50-60% of the manually harvested grapes are
fermented in average 6 year old oak barrels, the remainder
in stainless steel tanks. The wine then matures for 14-15 months, during which 50-60%
matures in French oak barrels.
GRAPES: chardonnay
ALCOHOL PERCENTAGE: 12.50%
SMELL & TASTE: Structured wine with a floral nose and
intense mineral, slightly smoky aromas. The taste is full and round,
but very elegant.
SERVING SUGGESTION: Serve at 12 to 14°C with various fish dishes,
shellfish and crustaceans, poultry and white meat, grilled or with
creamy sauces.
FACT: Les Preuses probably comes from the word 'Perreuse'
(stone), the name of an ancient Roman road that runs at the bottom of the
current vineyard ran.
