CLIMATE & TERROIR: Semi-continental climate with calcareous
bottoms. The vineyards are in a warm location and have a...
southern exposition. The bottom is very stony.
VINIFICATION: The wine is fermented at controlled temperature
stainless steel. The wine then matures for 13-14 months, with 50% of it
the wine rests on its yeast cells in French oak for 5-6 months
barrels. The remaining months it matures further in stainless steel.
GRAPES: chardonnay
ALCOHOL PERCENTAGE: 12.90%
SMELL & TASTE: This Chablis has an elegant character
floral and mineral notes. A rich chardonnay with a lot
liveliness and freshness. The wine is rounder and fuller than most
premier crus.
SERVING SUGGESTION: Delicious with grilled fish or white meat dishes
with creamy sauces.
FACT: In 2014 the domain obtained the sustainability certificate
'High Environmental Value' (HVE), this is the highest qualification for
the requirements imposed on the environment.
