CLIMATE & TERROIR: Semi-continental climate. The grapes are
from a twelve-acre parcel directly west of
Chablis, just above Vaillons. The vineyard has a northeasterly orientation
location. The soil contains clay and Kimmeridge.
VINIFICATION: 50% of the grapes fermented in French oak
barrels. The wine then matures for 13-14 months, removing 50% of the wine
Rests for 5-6 months on its yeast cells in French oak barrels. The

GRAPES: chardonnay
ALCOHOL PERCENTAGE: 13,00%
SMELL & TASTE: A fresh, aromatic wine with floral notes and
aromas of citrus.
SERVING SUGGESTION: An ideal accompaniment to fish, shellfish and
crustaceans, with or without a creamy sauce.
FACT: This vineyard has a special northeastern orientation
location, which gives this plot a cool climate, which is high
minerality and fresh style.
