CLIMATE & TERROIR: The vineyard has a double exposure
relative to the sun, namely south and southeast. It
terroir therefore benefits from more sun and a higher average
temperature than the other Premiers Crus.
VINIFICATION: 50% of the grapes are fermented in oak barrels
of at least 6 years old, the remaining 50% in stainless steel tanks. The
wine matures for 14 to 16 months, with 50% aged for 5 to 6 months
oak matures. The rest of the maturation takes place in stainless steel.
GRAPES: chardonnay
ALCOHOL PERCENTAGE: 12.50%
SMELL & TASTE: Intense mineral and both powerful and refined,
spicy and subtle with an incredible length. After some maturation
the wine develops aromas of candied fruit, hazelnut and a hint
of toast.
SERVING SUGGESTION: Fantastic with fish and seafood dishes
shellfish and basically everything that comes from the sea. Grilled or in a
creamy sauce. Poultry or white meats also combine nicely
with this wine.
FACT: The name of this wine is taken from the Mont de Lieu,
that marks the border between Champagne and Burgundy.
