The Story
Naltahua is a town in “Isla de Maipo” known for its river-fed agriculture and its postcard-perfect sunsets as the sun disappears below the horizon behind the hills. Sarmientos pays homage to the vines that support the grape clusters – healthy and vigorous vines – and to the landscapes and nature. These are the true fruits of this fertile landscape.
Vinification
As soon as the grapes arrive at the winery, they are immediately destemmed. They are then macerated in cold water for 4 to 6 hours to bring out their aromatic expression. The grapes are then pressed under low pressure and the resulting juice is cleaned. Finally, the must is fermented for 15 days in stainless steel tanks, at a temperature that does not exceed 14°C. In this way, the citrus flavors are developed and preserved, as well as the tropical fruit aromas that are so typical of Sarmientos de Tarapacá Sauvignon Blanc.
