The Macallan 1991 Premium Octave cask #7236576 has aged for 31 years in oak casks then spent the final months in an octave cask. This is a limited release of only 77 bottles. This is a single cask, bottled at cask strength, not chill-filtered or coloured.
Tasting notes:
Colour: Dark amber
Nose: Dark caramel with masses of fruits, blackcurrants, elderflowers and hints of rum & raisin. Notes of toasted oak with light herbal touches. Intense and sherried with lots of crystallised fruits drizzled with honey.
Palate: The robust sherry character remains prominent adding depth with creamy notes of spicy which help to offset the sweetness. Huge flavour but all well balanced and measured.
Finish: fading forest berries, spiced raisins and a whisper of sweet oak. Great complexity, perfectly integrated ensuring the ultimate satisfaction.
