El Jolgorio Agave Espadin is a genius mezcal made in Santa Maria Zoquitlan in Oaxaca from 100% wild Espadin agave. The espadin is the most used agave in Mexico. The plant reaches maturity between 5 and 10 years, much earlier than other agaves. Due to the reasonable sugar content, the espadin agave is perfect for making mezcal. The mezcal at El Jolgorio often ripens for several years in large glass jars before bottling. This creates a mild and smoother taste. For the production they use the traditional stone pit in which the pinas are smoked, after which they want to be crushed with a stone. After fermentation, it is distilled twice to obtain this fine spirit. The El Jolgorio Agave Espadin has a vegetable mineral nose with toasted notes. Clear citrus, basil, rosemary and of course a punch smelled like it should!
