You can't ignore the elephant with his beautiful swimming trunks; this wine wants to put itself in the spotlight. Ellie Sauvignon Gris comes from the Côtes de Gascogne and has an intense nose, full of white fruit such as peach and apricot. In the mouth, the intensity makes way for freshness and a balanced aftertaste.
A wine that combines excellently with a lot of snacks, especially if there is fish involved. Think of trout arancini and cod rillettes. But the main meal also benefits from this wine. For example, serve it with salmon tartare and fried ravioli.
CLIMATE & TERROIR: Sunny summer days and cool nights, with
always the influence of the Atlantic Ocean. The soil contains silt and
clay and is rich in 'boulbènes', very fine sand, silt and clay particles.
VINIFICATION: Sauvignon gris is early-ripening and is harvested at night in early September to preserve the aromas. Alcoholic fermentation
takes place at low temperatures and the wine matures for 4
months 'sur lie' before bottling.
