The lighthouse at Hook Head faces the powerful Atlantic Ocean on Ireland's south coast. Just 10 miles from the Waterford distillery, Martin Foley is the one who grows his barley here on clay / loam soils derived from limestone. It is an extremely maritime terroir, exposing the barley to the full range of salt-laden storms and sea breezes.
This whiskey is the first edition of the first release from the Hook Head farm. Distilled in 2017, bottled in February 2021 and aged for 3 years, 8 months and 25 days. No coloring, no chill filtration or additives.

Tasting Notes:
Color: Straw
Nose: Earthy maltiness and fresh earth, citrus peel, bread crust, cloves, white pepper, caramel, milk chocolate, salted popcorn and oak green leaves.
Taste: A spice bomb: cloves, white pepper, salted caramel, licorice root, ginger biscuits, lemon zest and chili chocolate.
Finish: Dry, but with a permanent oiliness which retains the spiciness for a long time.
