The grapes are picked at the coolest times of the day to preserve freshness. After three to four days of cold pre-fermentation, the traditional fermentation (temperature controlled) follows with maceration on the skin in concrete vats. Then part of the wine matures for a short period in used wooden barrels to ensure structure and roundness of the wine. Approximately 3 years of storage potential.
