This, Kilchoman's second official Fino Sherry Matured release, was matured for a minimum of five years in 20 fino sherry butts previously used by Bodega Jose y Miguel Martin.
Maturation in ex-fino sherry casks has given the whisky layers of minerality, oak and maple syrup which pair nicely with the natural citrus sweetness and maritime peat smoke of Kilchoman.
