VINIFICATION: Fermentation starts in stainless steel tanks. Halfway through, the
must is transferred to new or once-used barriques, where
fermentation is completed. In July, the wine is bottled and matures
for another 6 months in the bottle.

NOISE & TASTE: Gastronomic wine with lots of structure and
complexity, aromas of citrus, tropical fruit and a bitter aftertaste. The refined acids allow the wine to age remarkably well.
SERVING SUGGESTION: Delicious with grilled scallops, fish pie and
other rich fish dishes, spicy dishes with chicken, pork tenderloin and
white or red mould cheeses. FACT: The wine was originally made from a vine that has been
adapted to the vineyard since 1897.
Poderi Einaudi was founded by Luigi Einaudi, an economist, journalist and, after WWII, the first president of Italy. Since 1990, the winery has been in the hands of his
great-grandson Matteo Sardagna, who in turn took over the company from his
mother Paola. The rule of thumb when choosing vineyards at Einaudi is that ‘a great wine can only come from a great vineyard and great
terroir’. The crus San Luigi in Dogliani and Cannubi, Terlo and Bussia in Barolo
speak to everyone’s imagination in this respect. Since Matteo took over, the winery has made great strides. A new cellar with tried-and-tested vinification materials in a new guise such as terracotta amphorae, new
vineyards in Barolo and cultivation of the vineyards are just a few examples. Poderi Einaudi is a dynamic winery that aims to express the characteristics of the versatile terroir in Dogliani and Barolo in both a classic and modern way.
