The Languedoc is the cradle of wine growing in France, and owes its introduction of vines to the Greeks and winemaking techniques to the Romans. It is the oldest and largest wine region in France. The Pays d'Oc lies between the sea and the mountains and has a warm, sunny Mediterranean climate. The grapes in Le Raisin Chardonnay grow on limestone marl, where heat and humidity are in balance. As a result, the vines produce grapes with good acidity. After harvest, the grapes are gently pressed and fermented at a low temperature to preserve freshness and aromas.

Both fermentation and maturation take place in French oak. Before this, the wine undergoes 100% malolactic fermentation, to obtain that buttery taste. Le Raisin Chardonnay is intense and bright gold in the glass. The nose is expressive and powerful with pear tart, hints of bourbon vanilla and toasted bread. On the palate, the rich, buttery texture is balanced by a crisp acidity. Subtle toasted and honeyed notes can be recognized in the lingering finish.

SERVING SUGGESTION: Serve slightly chilled, with a salad of
confit duck gizzards, grilled chicken, gratinated vegetables
or risotto with Parmesan cheese.
