CLIMATE & TERROIR: A Mediterranean climate with warm summers
and fairly mild winters. The terroir contains calcareous sandy and red
clay soil full of stones.
VINIFICATION: The grapes are harvested at night, quickly cooled upon arrival at
the wine estate and fermented at a low temperature in
stainless steel tanks. The wine matures for 6 to 8 months in oak
barrels, with the yeast cells being stirred regularly.

ALCOHOL PERCENTAGE: 13.00%
NOIS & TASTE: The Chardonnay has a light golden yellow colour with
citrus and passion fruit in the nose. Deliciously juicy with beautiful
acidity, a full-bodied wine with fresh pineapple in the aftertaste.
SERVING SUGGESTION: Combine this wine on a sunny evening
with fried scallops, braised vegetables and orange butter,
a real treat! FACT: Chardonnay comes from Hérault and Aude. Hérault is
warm and adds richness. Aude is cooler and the grapes have
an almost Burgundy-like minerality. The combination of these
two areas creates a perfect balance in this wine.
