CLIMATE & TERROIR: A Mediterranean climate with warm summers
and fairly mild winters. The terroir contains calcareous sandy and red
clay soil full of stones.
VINIFICATION: During fermentation, optimum
extraction from the grape skins is ensured, so that a beautiful structure is created.
Some of the grapes mature for 6 to 8 months in oak barrels.

NOIS & TASTE: The Merlot is deep dark purple with expressive
aromas of cherries, forest fruits and blackberries. Round in the mouth with polished
tannins and light vanilla tones. In the aftertaste, the delicious berry fruit and ripe blackberries come to the fore.
SERVING SUGGESTION: Delicious during a picnic with a
sandwich with juicy steak strips and balsamic onions.

Virginie always performs a green harvest, cutting off entire bunches before harvest to achieve a low yield and therefore a lot of concentration in the grapes.
