A manual harvest is carried out into small crates, and the grapes selected with the utmost care. Fermentation is meticulous, with temperature control. Left to rest for two winters, the second of which the lees are stirred very slowly and gently. This process lasts 10 months and serves to give the wine complexity. A small portion of the mature wine is matured in French oak barrels, and blended back in after 5 months. Finally, the wine is refined in bottle for 7 months.
APPEARANCE: Pale and bright, lemon in colour with greenish flickers.
NOSE: Very floral, with notes of jasmine, rose and gardenia. Tinges of confectionary, tropical fruit and stone fruit like apricot.
MOUTH: Delicate, voluminous and pleasant, with balsamic notes. Reminiscent of the salinity of Mar de Frades.
