Domaine des Diables is owned by Guillaume & Virginie Philip - well-known
from MIP. This 30-hectare wine estate is located at the foot of the Sainte
Victoire mountain in the Provençal municipality of Puyloubier. The soil around the estate
consists of clay, loam and sand, an ideal composition for the production of
refined, balanced wines. Viginie and Guillaume have cultivated the vineyards sustainably
from the start. The plots are permanently influenced by
twelve different winds - including the Mistral. These winds, in combination
with the warm, dry climate, prevent the development of almost all
fungal diseases and the use of pesticides is therefore hardly
necessary. The environmentally friendly approach and the use of the most modern
vinification techniques produce wonderfully pure wines. Their rosés in particular
are incredibly popular.
CLIMATE & TERROIR: A Mediterranean climate with hot, dry
summers and fairly mild winters. The soil contains lime, sand, red
clay and stones.
VINIFICATION: The grapes are pressed under oxygen-free
conditions. The wine then ferments at low temperatures
and then matures for 9 months in 600L oak barrels
(demi-muids) with the yeast cells being stirred regularly.

ALCOHOL PERCENTAGE: 13.00%
NOIS & TASTE: A delicate, rich and harmonious wine with
aromas of white and yellow fruit combined with subtle notes of
lightly toasted fruit. The mouth is complex and surprises with its freshness
and minerality.
SERVING SUGGESTION: Gastronomically usable wine that goes well
with Mediterranean cuisine. Serve the wine at
12-14°C.
FACT: 'Rose des Bois' means 'Rose in wood' in French and
refers to the 9 months of wood aging this wine has had. This
is a rarity in the world of rosé.
