We were set to make a rum with 100% natural coconut sourced from local farmers. Four years of experiments later, we found the perfect formula. The exquisite marriage of two icons of Caribbean culture offers a perfect ratio: one coconut per litre of rum. Quite a challenging recipe when you think a coconut only yields about forti-five fruits each year... Coconuts, picked fully ripe, are cut into small chunks and left to dry gently to preserve the most concentrated flavours, then infused in our Barbados rum. Now, you know why we call it Cut & Dry.
