Trimbach Riesling
The Riesling is perhaps the best-known grape in the entire Alsace region. In this northern French region, this grape has been very popular for decades. Partly thanks to Trimbach, this grape has been able to create a large base of support among many wine lovers. The Riesling has a higher acidity than, for example, the Pinot Blanc and Pinot Gris, but it is precisely these acids that give the Trimbach Riesling its character.
The old Riesling vineyard of Trimbach
The specific vineyard plots for Trimbach Riesling are selected each year by Pierre Trimbach. Balance is important here, as is evident from his ability to keep the acidity of his wines under control, but at the same time also to provide the necessary tension. The style is highly praised by lovers of dry and elegant wines.
The grapes are normally harvested at the end of October, after which a strict selection follows. The grapes are carefully pressed pneumatically for 2 to 3 hours. The juice from the last 30 minutes of pressing is kept separate and sold in bulk. The following 3 to 4 days, fermentation begins for a duration of 2-4 weeks. There is no secondary malolactic fermentation in order to retain as much natural acidity as possible. The wine remains in the barrels or stainless steel tanks until bottling, which begins in April and ends in September. A longer bottle maturation in the cellar of 5 to 7 years is maintained for the best Rieslings.
