Terroir
The vineyards are located more than 400 meters above sea level, which means the nights are cooler, which means that the grapes can ripen better and develop the perfect acidity.
Vinification
The grapes were picked early in the morning to ensure their delicate aromas, scent and freshness were preserved. Fermentation at low temperatures preserved the aromas of the fruit. A state-of-the-art production process minimized the influence of oxygen. The innovative cold stabilization technique provided even more fruity aromas and a very pleasant, delicate body. With quality as a priority, Maison Saint Aix invests in innovative techniques to refine traditional methods, rather than replace them.
Tasting note
The wine has an enchanting salmon pink color. The nose is aromatic and fresh with crispy notes of ripe red fruit on the palate. The acidity subtly levels out and gives the wine a balanced, long and clean aftertaste. The rosé has a rare freshness and minerality.
Delicious
Delicious with salads, sushi, fish dishes or, for example, with grilled dishes from the BBQ. AIX rosé is also perfect as an aperitif.
