The Story
Naltahua is a town in “Isla de Maipo” known for its river-fed agriculture and its postcard-perfect sunsets as the sun disappears below the horizon behind the hills. Sarmientos pays homage to the vines that support the bunches of grapes – healthy and vigorous vines – and to the landscapes and nature. These are the true fruits of this fertile landscape.
Vinification
The grapes are taken to the cellar to be processed and fermentation begins in stainless steel tanks. This lasts for 6-7 days at controlled temperatures that do not exceed 28°C. At this stage, various pumping methods and the controlled addition of oxygen are used to maximize the extraction of color and aromas.
Once alcoholic fermentation is complete, the lees are filtered from the liquid and undergo malolactic fermentation. A percentage of the wine is kept in contact with oak for approximately 3 months. Finally, the blend of the Sarmientos de Tarapacá Cabernet Sauvignon is made by combining the different components.
Tasting notes
Colour: Red with violet hues.
Smell: Up front there are notes of red fruit such as raspberries and cherries. Then soft notes of vanilla and caramel are added in combination with smoky notes of oak.
Serving temperature: 15 °C.
Taste: This is a medium-bodied wine with balanced acidity and rounded tannins. This combination leads to a savoury and pleasant aftertaste.
Wine and food combination
The Sarmientos de Tarapacá Cabernet Sauvignon wine goes well with all types of roasted red meat, mushroom risotto and cheese.
