The Story

When the grapes arrive at the winery, they are first destemmed and then cold-soaked for four to six hours. This is done to bring out the aromatic expression of the grapes. The grapes are then pressed under low pressure and the juice is clarified. This is how the clear liquid is inoculated with specially selected yeasts. These yeasts then ensure the fermentation process that lasts for 15 days, during which the future grapes are in contact with oak the whole time. The temperature is monitored and always kept below 15°C in order to preserve the aromas typical of Sarmientos de Tarapacá Chardonnay.

Terroir

The land here is flat and the soils are mainly alluvial, formed from rocks carried here by the rivers from the mountains towards the ocean. The texture is sandy loam with varying degrees of clay. Other areas have more stones in the soil. This increases the permeability of rainwater in the same soil, which in turn promotes the root growth of the plants.

Climate

Temperate Mediterranean with a good temperature range between 17°C and 25°C during the ripening period. This promotes the sugar concentration, the preservation of the natural acidity and a good development of the aromas.

Tasting note

Colour: Yellow with golden hues.

Smell: Tropical aromas of peach, pineapple and banana, mixed with sweet notes of vanilla.

Serving temperature: 12 °C.

Taste: Balanced acidity with a fruity aftertaste feeling that leads to a long and pleasant finish
