CLIMATE & TERROIR: The Pinhão Valley has warm summers and cold
winters. The soil contains slate and schist.
VINIFICATION: After the intensive soaking period, the fermentation
continues. When approximately 8% is reached, the process is stopped by
adding wine alcohol, after which the wine rests for almost 2 years in
wooden barrels. Further maturation takes place in the bottle.
GRAPES: touriga francesa, tinta roriz, touriga nacional, tinta
barroca
ALCOHOL PERCENTAGE: 20.00%
NOIS & TASTE: Blackcurrants, plums and cherries jump out of the
glass, followed by a hint of mint and rose petals. In the mouth
an incredible freshness, pure fruit and attractive tightness,
with some lavender and spiciness. The aftertaste is very long.
SERVING SUGGESTION: Delicious with everything with chocolate, dried
fruit, walnuts and cheeses. FACT: The name Sentinels (‘sentinel’ or ‘guardian’) refers to the 335 granite pillars that were placed in the Douro between 1758 and 1761 to mark the area of origin of quality port wine.
