In the volcanic soil of the Colognola ai Colli area, the grapes for the Soave Fontana from Tenuta Sant'Antonio grow. The average planting density of 4,000 to 8,000 vines per hectare does not yield more than a kilo of fruit per plant after heavy pruning and green harvesting, but their acid balance is excellent, as is the sugar content and the aroma concentration of the pulp and skins. After manual harvesting, only the whole grapes are briefly pressed at 8-9°C, after which fermentation takes place at 16°C. Garganega is the most important variety in the Soave with 90%, supplemented with equal parts Trebbiano di Soave and Chardonnay.

The wine is left to mature on its yeast cells until the following spring so that the most beautiful aromas are preserved. The Soave from Tenuta Sant' Antonio is therefore intensely fragrant and fresh white fruity with flavours of apple and pear. Precisely because of a limited yield per hectare, the wine is not thin and watery but full and fatty with even a little butter in the taste. Served cool between 10-15°C it is a delicious wine to enjoy, full of juice and surprisingly tasty with salads, rice dishes, pasta and freshwater fish.

CLIMATE & TERROIR: The summers are warm, the winters relatively mild.
The soils consist of a thin layer of lime, pebbles, clay loam and sand.
The vines are on average 20 years old.
VINIFICATION: After the manual harvest, only the whole grapes are briefly pressed after which fermentation takes place. The wine
matures on its yeast cells until the following spring. GRAPES: garganega (90%), trebbiano di soave (5%), chardonnay
(5%)
ALCOHOL PERCENTAGE: 12.50%
NOISE & TASTE: This Soave is intensely fragrant and fresh with aromas of
apple and pear. Precisely because of a limited yield per hectare, the
wine is not thin and watery but full and fatty with even a little
butter in the taste.
SERVING SUGGESTION: Serve as an aperitif but also surprisingly
tasty with salads, rice dishes, pasta and freshwater fish.
FACT: The basic grape of Soave is phonetically
pronounced as carganèga by many people, this is different from the Italians who
put the emphasis on the second a, cargànega.
