Suppai means 'sour' and is a new plum sake from the Wakayama region, the plum region of Japan. The Heiwa Shuzõ brewery has its own orchards and adheres to the slow brewing principle. Three times as many plums as usual are used for this sake, which gives the sake extra flavor, structure and freshness. The sake has been aged for three years and is one of the best plum sakes in the country.
