Kinoshita Shuzō is a small-scale brewery in the Kyoto region of origin, close to the coast of the Sea of Japan, and was founded in 1842. In recent years, the brewery has been in the spotlight by appointing the first foreign head brewer (tōji), the Englishman Philip Harper, and by introducing revolutionary label designs. Head brewer Harper implemented traditional brewing methods, such as the slow-brew methods yamahai and kimoto, and the use of wild yeasts. His full-bodied, robust sake is notable for its relatively high alcohol content, with some varieties reaching the highest level of 21-22% natural alcohol.
