Dalmore boasts the oldest stills in the Scottish Highlands. For aging, a wide range of sherry casks from the Gonzales Byass vineyards in Andalusia are used, while the deer that adorns each bottle of Dalmore is the emblem of the Mackenzie family, the historic owner of the distillery.
Initially aged in ex-Bourbon American oak barrels, Dalmore 25 years is then transferred half of it to rare ex-Palomino barrels until sherry and first fill American oak barrels. The liquids are left to mature for a long time until they are again transferred to new American oak barrels and left to harmonize. Finally it is finished in Tawny Port barrels which give it an exceptional floral character.
Aromatic profile: On the nose exotic fruit, marzipan, vanilla, fig cake. On the palate, licorice, orange peel, chocolate sweets with a long finish of demerara sugar, gingerbread and maple syrup.
