Taste profile:

Vinification:
Since 2019, the grapes of Bolla Tufaie come from the Castellaro vineyard, one of the 33 crus in the Soave area. The fermentation process of the Tufaie takes place under controlled temperature for about 20 days. The yeast cells remain in contact with the wine for as long as possible after fermentation. During this period, the yeast cells are stirred twice a week to increase the contact surface. This technique is also called 'bâtonnage'. This provides an extra flavor dimension, in addition, part of the wine undergoes malolactic fermentation to preserve fruit. Before bottling, the Tufaie matures for 1 year in the cellar in stainless steel tanks and, for a small part, in French oak barrels.

Wine and food:
Risotto, veal, pasta, salads, fish and shellfish, soft cheeses.

Awards:
93/100 pts. – Doctor Wine
90/100 pts. – James Suckling

- ****(*) – max. 5 stars - Anise and flowers, peach, pear, ripe. Power, elegant, beautiful acids, lush. – Perswijn 2020

- “Different from other soaves. Tufaie is in a class of its own. For those who like it: matured in wood. Long-term storage ‘sur lies’. As a result, richer, more complex and fuller. Marzipan fruit: peach, mango and banana. Some coconut. Sufficiently fresh. Velvety freshness. Fine, soft, almond bitters this year.”, Harold Hamersma in De Grote Hamersma, rated with an 8.5.

- “The best possible introduction to Bolla is the Tufaie, a Soave Superiore that was partly barrel-aged and composed of 85% Garganega, supplemented by Trebbiano di Soave. The wine, bottled in a heavy bottle and still looking young, tastes pleasant, fresh and very juicy with a slightly nutty and at the same time mildly fruity aroma towards peach and pear and will form a beautiful partnership with, for example, freshwater fish” Hubrecht Duijker

Background information:
The name Tufaie comes from the old name of the Tufa Quarries that once surrounded Verona. This golden volcanic stone, like the color of this wine, was used to build the most beautiful churches and the 'Teatro Romano'.

Since the 2019 Vintage, the grapes of Bolla Tufaie come from the Castellaro vineyard, one of the 33 crus in the Soave area. The vineyards are located on the Castellaro, a volcanic mountain in Veneto. This volcanic cone is known for its height, soil and ventilation. On the slopes, a vineyard of 21 hectares is cultivated (the total classic area of Soave is 1,700 hectares), of which 2 are entirely dedicated to Bolla Tufaie Soave Classico Superiore DOCG.

The story of the Bolla winery begins with one man, Alberto Bolla. He lives in the north of Italy, in the Veneto region, where he runs a small family inn. In order to offer his guests more than just a place to stay, he decided in 1883 to start producing a wine that he could serve to them. Business was going well and Alberto had a dream: to reunite his family to continue the business together with his brothers Giulio, Luigi Albano and Enrico, who had emigrated abroad. No sooner said than done. All the brothers returned to Italy and the family decided to focus entirely on wine production – the rest is history. A great sense of family, sacrifice, passion and dedication to wine growing; these are some of the fundamental values that set Bolla apart.

Another important aspect is the vision and the ability to innovate. For example, the Bolla family was the first to see the potential of red wine production in the Valpolicella area and were pioneers in the production & sale of quality wines in a glass bottle. Bolla is also a pioneer in the area of technical innovation. With this passion & oenological skills, Bolla was the first to be able to convert dried grapes into a dry red wine: the Amarone. In this way, they started a revolution in the wine market in the 90s. From that moment on, the Amarone became the icon of Italy and the figurehead of Verona.

Now, more than 130 years after its foundation, the Bolla winery has grown into a world-famous winery with a wide range of wines. What has remained is the unique taste of the Bolla wines, resulting from the special climate and terroir of the Veneto area. Since 2015, oenologist Christian Zulian has been winemaker at Bolla to take the winery to an even higher level. Before joining Bolla, he worked for thirteen years at Marchesi Antinori and for several years at Domaine Baron de Rothschild.
