This allows the grapes to ripen slowly and fully develop their aromas. After manual harvesting, the grapes are gently pressed and the juice is transferred to new French oak barrels. Here the must undergoes fermentation, after which the wine matures for a few months on the lees (dead yeast cells). This makes the wine softer and rounder and protects it from oxidation. The Valserrano Blanco is a round, harmonious wine with a beautiful elegance and freshness. The nose is inviting with aromas of white fruit, fresh herbs and elderflower, followed after a while by notes of peach and grapefruit. Intense and soft in taste with notes of pears in syrup, some tropical fruit and creamy vanilla tones. The fresh acids give the wine a beautiful refinement and keep it in balance. A sturdy wine with a nice acidity and lots of fruit and length.
