The Waterford Sheestown 1.2 is one of the first single malt whisky releases from the Waterford Distillery in Ireland. This second Sheestown release was bottled in the Farm Origin Series focused on terroir in whisky. This particular expression was made using grain from Sheestown grown on a single farm by Phillip O'Brien. The Sheestown matured in first fill American Oak, virgin oak, Premium French oak and Vin Doux Naturel barrels and was bottled in 2020 at 50% ABV as a limited edition of 9000 bottles.
Nose: Honeyed barley, fresh quince and apple, with a slight hint of festive spice growing
Palate: Melon, Seville orange and another spicy touch of crushed clove
Finish: Lingering baking spices and butterscotch
