This Fins Bois was discovered only recently in the small cellar of a passionate winegrower, on the outskirts of Saintes, my home. An old cognac, much older than the minimum 10 years required for an XO and yet still fresh and intense. It has incredible character, like a cool spring day, with notes of delicate flowers, truly intriguing in many ways and quite unusual. Bottled at cask strength, it is completely untouched, no added sugar, no added caramel and just one barrel.
